How the odds are calculated

Zcash difficulty counts Equihash solutions. At difficulty D the network needs about D × 8,192 solutions per block on average. Divide that by your solution rate and you have your average time to a block.

Blocks arrive at random, so the chance of at least one block within a period t is 1 - e^(-t / average). Waiting does not make a block more likely: every solution is an independent draw.

Reward figures use the miner subsidy of 1.25 ZEC per block, leave out transaction fees and subtract the pool fee. They are long-run averages: solo mining can find two blocks in a day or none for months.
